Gather Your Ingredients
The ingredients list for this recipe is pretty tiny. All you need is a sugar free dark chocolate and nuts of your choice.
I used Lily’s dark chocolate chips and pecans. Keep in mind that the chocolate you use will significantly impact the amount of sugar in your candies.
Choosing a nut that’s high in fat and low in carbs is also a great way to keep this keto friendly while also increasing fat content. Macadamia nuts or hazelnuts would be delicious in this. I only had pecans on hand when I made these.
You will also need a silicone candy mold to pour and freeze the mixture in. If you’re in a pinch, an oiled muffin tin would probably work.
The amount of chocolate and nuts you need for this will vary based on the size of your candy mold. For my mold, I used 1.25 cups of dark chocolate and about a quarter cup of pecans. You may need to play with this a bit to fill your mold.
Using a non-stick spray or butter on your microwaveable bowl helps to get all the chocolate out of the bowl, but it’s not completely necessary to use.
Make the Keto Dark Chocolate Nut Balls
Start by adding about half of the chocolate chips to a microwave safe bowl and microwave them until they melt. Microwave for about 30 seconds, stir, and repeat the process until the chocolate is melted completely.
Pour melted chocolate into the candy mold, filling each opening until they’re halfway full.
Coarsely chop the nuts. To make this part easy, use a handheld chopper. You’re not looking for a fine powder here, so don’t over-do it!
Add a bit of the chopped nuts into each mold to make a nice layer of nuts.
Now microwave the other half of the chocolate chips using the same “nuke, stir, repeat” method used for the first batch of chocolate.
Pour the remaining melted chocolate into the candy mold until each form is full.
Carefully place the filled chocolate mold in the freezer. Freeze for about 30 minutes, then check it. They’re typically solid and ready to eat by then, but if they’re still liquidy, give them more time in the freezer.
Once your candies are solid, you can store them in the fridge. Note that they will melt on the countertop!
