The great thing about this keto fluff is the amount of customization you can get from it. With so many different flavors and toppings to mix and match, there’s a ton of variety!

Ingredients for Keto Fluff
For this super simple recipe, you only need two ingredients:
- Sugar free Instant Jell-O pudding mix in your flavor choice – get the small box (0.9oz – 1oz, depending on flavor)
- 2 cups of heavy whipping cream
An important note: do not use the “cook & serve” mixes! I accidentally grabbed this type at the store once without realizing it. I learned the hard way that day that it has to be the instant mix!
There’s so many delicious flavors to choose from. I love the white chocolate, cheesecake, butterscotch, and chocolate flavors.
You will need an electric hand mixer or stand mixer. I use my Kitchenaid stand mixer to make it as fast and easy as possible!
Making the Keto Fluff
Once you’ve decided which flavor of pudding mix you’re gonna use, grab 2 cups of heavy whipping cream.
Add the pudding mix and 2 cups of heavy whipping cream to the bowl and mix. If you’re using a stand mixer, use the whisk attachment.
Whip for about 2 minutes until the mixture becomes fluffy. It will have a texture like homemade whipped cream.
Serve It Up
That’s all there is to it! Once the mixture is fluffy, turn the mixer off. Divide into bowls and garnish with any yummy toppings you’d like.

Ingredients
- 1 pack Sugar Free Jell-O Instant pudding mix (the small box - approx 1oz)
- 2 cups Heavy Whipping Cream
Instructions
- Add 2 cups of heavy whipping cream to mixing bowl
- Add 1 pack sugar free Jell-O pudding mix
- Whip on low for 30 seconds
- Whip on medium-high for about 1-2 minutes, until mixture is fluffy. It will have a consistency similar to homemade whipped cream.
Notes
An electric mixer or stand mixer is needed to whip the mixture into a fluff.
I have never attempted whipping by hand and can't comment on how well this would work.
Be sure to get the sugar free instant pudding mix. "cook & serve" or pie filling mixes will not work!

How many carbs in one serving and how big is a serving? If you are calling something “low carb” it is important to include this info so people can make an accurate choice.
Hi Sherry! I completely agree – it’s important to know serving size and macros (especially carbs) to make informed decisions. The serving size (yield) and nutrition information can be found at the bottom of the recipe card. Keep in mind that carbs will vary based upon the flavor of pudding mix used and the specific brand of heavy whipping cream used (carb amounts vary from one brand to another).
I divide the entire batch of keto fluff into 8 servings. One serving has 5 carbs when you using the white chocolate flavor pudding mix and the generic brand heavy whipping cream from my local grocer.

I didn’t weigh or measure the portions – just “eyeballed” it into 8 equal servings. My best guess is that each serving was about the size of 3 heaping tablespoons. I’ll weigh out the serving next time I make it and update the card. Enjoy! 🙂
Can this be made using half and half instead of heavy cream?

I’ve never tried it using half and half. My firth thought is that it may work, but it’s likely to not be as airy and fluffy as using heavy cream. If you decide to give it a try, let us know how it works out!

I have tried twice to make this fluff and I just cannot get the correct consistency. The first time I used a milkshake hand belnder and got a butter consistency. The second time I used an electric hand mixer and it was liquidy. I even tried putting it in the freezer to set. Do you k,ow what I’m doing wrong??

I’m sorry you’re having trouble with the recipe. The only problem I’ve ever encountered with this recipe is when I accidentally grabbed the “cook and serve” pudding mix instead of the “instant” pudding mix. Double check that you have the instant sugar free pudding mix. I would also double check that you’re using heavy whipping cream – half and half or other creams may not work.

What size pudding box did you use? There’s 2 sizes. Are you just substituting heavy cream in a 1:1 ratio to the milk required by the directions on the box? Or are you using less cream than you would milk? Thanks.

I’m using the small box – the exact size varies from flavor to flavor (for example the banana cream flavor is 0.9oz and the white chocolate flavor is 1oz.). Get the small box that’s about 1oz for this recipe. I’ve never actually used the recipe on the Jell-O box, but it appears that it would be a 1:1 substitution. In place of the 2 cups of fat free milk that it suggests, I use 2 cups of heavy whipping cream.

Can this be made ahead of time and stored in the fridge, or does this need to be eaten right away?

Yes – you can make it ahead and store it in the fridge. I’ve stored it for 5 days in the fridge and it was still good to eat.
I just made this with sugar free chocolate and a 16oz heavy whipping cream made with almond milk. It whipped up less than a minute of mixing with a hand mixer on high. It is so yummy. Thanks for the recipe.

Hi Ann! I’ve never tried substituting the heavy whipping cream for cool whip. My first thoughts are that it likely wouldn’t work – I have a feeling that it wouldn’t dissolve the powdered sugar free jello and would result in a gritty texture. If you try this substitute, please let us know how it turns out!
I do believe that you can keep this in the freezer for a more icecream-like texture. I would assume that it would keep in the freezer for quite a while; it keeps in the fridge for at least a week. I’ve never tried storing keto fluff in the freezer, so you might need to experiment with this.
OMG! This was sooooo delicious! Used the white chocolate sugar free jello pudding then I added some sugar free chocolate chips and some pecans and it was awesome!
