Seriously, this dip is a huge hit every time I make it. Even when I double the batch and make more than I could ever expect to be eaten, it’s always gone! All of our friends and family, low carb keto dieters or not, can’t get enough of this dip!

This low carb, keto friendly spinach dip is a fast and easy dip that will please the whole crowd!

The best part is that it only takes 3 ingredients and 30 minutes to make! It’s great for that last-minute gathering!

Gather Ingredients and Prep

For this low carb keto spinach dip recipe, you will need:

  • a bag of frozen chopped spinach – thaw it ahead of time if you can
  • a bag of shredded mozzarella cheese
  • a tub of sour cream (full fat of course!)
  • a glass baking dish (any size will do – choose one that will hold the amount of dip you want to make)

Pre-heat the oven to 425⁰ F.

It’s best to prep the frozen spinach prior to mixing and baking the dip. Thaw your spinach, then blot it dry with paper towels.

I’ve found the easiest way to do this is to simply throw the spinach in a strainer and sit it in the sink.

If I’m in a super rush, I’ll run warm water over the spinach to thaw it faster.

Once the spinach is thawed, blot it with paper towels to dry it off and absorb any excess water.

Measure and Mix Ingredients

The beauty of this recipe is the simplicity of customizing how much dip you want to make. The only really important rule to follow is keeping the amount of sour cream and mozzarella cheese that you use to an equal 1:1 ratio.

So for example, if I’m making a small batch, I’ll use a full 8 ounce tub of sour cream and then add 1 cup (8 ounces) of mozzarella cheese. If i’m going for a big batch, I’ll use a 16oz tub of sour cream and 2 cups of mozzarella cheese.

When adding the spinach, I sort of eyeball it and add in enough to have spinach mixed in so that you get a bit with each bite.

To mix ingredients together:

  • Put half of your sour cream in the glass baking dish
  • Add half of our mozzarella cheese to the sour cream
  • Mix with a spoon or spatula until the sour cream combines with the cheese
  • Add about a handful of spinach or so to the mix and combine again
  • Add the rest of your sour cream and mozzarella cheese
  • Mix ingredients again
  • Add spinach and mix as needed until you get the right amount of spinach incorporated into your dip
  • Once your happy with the amount of spinach in the dip, flatten it out so that the top is nice and flat
  • Sprinkle a thin layer of mozzarella cheese to the top of the dip

Bake that Beautiful Keto Low Carb Spinach Dip

Put the dish on the middle rack of the oven and bake at 425⁰ F for about 25 minutes. It’s done when the top is golden brown and bubbly.

When done, remove from the oven and serve immediately. I really like dipping pork rinds in the dip.

Other great dipping options include pre-boxed keto friendly crackers, homemade keto crackers, or even bacon wrapped weenies or pepperoni chips.

Of course you can serve this dip with regular old tortilla chips for your non-keto friends and family too!

Fun and Interesting Variations to Try

You can customize this dip and change of the flavor by adding a variety of different spices. Add the seasoning when first mixing the sour cream and mozzarella cheese, then again as you add in the spinach. Taste it along the way to get the right amount of flavoring you’re after. Things that I’ve tried and the family loved:

  • Classic mix: Salt, pepper, garlic, and onion
  • Spicy: Salt, pepper, cayenne, and red pepper
  • Italian: Salt, pepper, garlic, onion, oregano, and parsley

This low carb keto spinach dip is also really good with artichoke hearts added it to it! Just get a can of artichoke hearts, drain them and blot them dry, then add during the mixing process when you add the spinach!

Low Carb Keto Spinach Dip

Cook Time: 25 minutes
Total Time: 30 minutes

Ingredients

  • 1 bag frozen, chopped spinach (thawed and blotted dry)
  • 1 bag shredded mozzarella cheese (get the big bag!)
  • 1 tub full fat sour cream
  • seasoning of your choice to taste (salt, pepper, garlic & onion are great)

  1. Put half of your sour cream in the glass baking dish
  2. Add half of our mozzarella cheese to the sour cream
  3. Mix with a spoon or spatula until the sour cream combines with the cheese
  4. Mix in any seasoning you're using.
  5. Add about a handful of spinach or so to the mix and combine again
  6. Add the rest of your sour cream and mozzarella cheese
  7. Mix ingredients again
  8. Add spinach and mix as needed until you get the right amount of spinach incorporated into your dip
  9. Once your happy with the amount of spinach in the dip, flatten it out so that the top is nice and flat
  10. Sprinkle a thin layer of mozzarella cheese to the top of the dip

Notes

The exact amounts of sour cream and mozzarella cheese needed depends on how much dip you want to make/how big your glass baking dish is.

The sour cream and mozzarella cheese should be mixed at a 1:1 ratio. For example, if you use 8 oz of sour cream, add 1 cup (8oz) of mozzarella cheese.

Add as much spinach as you want, 1 handful at a time.

Fun variations to try: add artichoke hearts and/or seasoning varieties to change up the flavor!

  1. Made this recipe for a small gathering this weekend, i cannot believe how freaking good this dip is from how simple and easy it was to make!! just make sure to get the spinach fairly dry, the more wet your spinach is the more ‘watery’ the dip will be. Thank you so much!

    1. I’m so glad everyone liked it, Jake! Yes – it’s very important that the spinach be as dry as possible before adding it to the dip. You’re exactly right that wet spinach makes the dip a more watery. But the flavor is still delicious! 😉

    1. The top layer of cheese is stringy when it first comes out of the oven. The rest of the dip (under the top layer of cheese) is soft but not stringy, which makes it easy to dip. As the dip cools down, the top layer of cheese loses its stringiness.
