Have you ever had a day where you feel hungry, but none of the usual go-to meals sound good? When I find myself in this type of funk, I know just the food to make to cure it. A keto stuffed sandwich! A fast and easy keto-fied version of Hot Pockets, these really satisfy a sandwich craving.
I know, it’s not a very catchy name, but I promise it’s delicious! The best part about the keto stuffed sandwich is the versatility it offers. You can stuff it with anything your heart desires – deli meats, cheese, peppers and other veggies. Get fancy and stuff it with crab, tuna, or ground pork. The sky is the limit with this recipe!

The dough for this keto stuffed sandwich comes together quick, and it’s ready to use right away. This recipe makes enough dough for 4 sandwiches, so there’s plenty to share (or save for later).
Gather Your Ingredients
For the dough, you’ll need almond flour, coconut flour, xanthan gum, apple cider vinegar, 1 egg, and a bit of salt.
You’ll also need a rolling pin to roll out the dough. I like using my adjustable rolling pin set to the blue size (which is 1/16th inch or 2mm thickness) to make it easy to get a nice equal thickness throughout the dough. This helps to get consistent texture to your keto stuffed sandwich.
Make the Dough
Don’t worry, this part is easy and only takes few minutes. Mix the dry ingredients in a bowl, then mix in the vinegar and egg.
If your dough isn’t coming together, add a smidge of water just a little bit at a time until it comes together.
Divide the dough into 4 equal pieces.
Roll the Dough
Prep your rolling station by laying out a large piece of parchment paper onto your work surface. Then grab one of the dough pieces, put it on the parchment paper, then add another piece of parchment over the dough ball.
Now roll out the dough until you have an equal thickness of 1/16th inch (2mm). I use this handy adjustable rolling pin to get perfectly consistent thickness throughout the dough.
While rolling the dough, try to make them into a shape that’s fairly equal on all sides. Circle, square, and rectangle all work – and it doesn’t have to be perfect.
Repeat this process of rolling the dough out into a fairly equal shape that’s 1/16th (2mm) thick for the remaining 3 dough balls.
Stuff Your Keto Stuffed Sandwiches
For each piece of dough, fill one side of it with your choice of filling (usually a spoonful or two is all you need). I like to fill mine with cheese and pepperoni for a pizza stuffed sandwich. The hubby likes to fill his with ground pork and seasoning to mimic a pot sticker.
Once you have your fillings in the dough, fold it over and then press it shut using your fingers or a fork (like how you would press the edges of a pie crust closed).
Fry Your Keto Stuffed Sandwich
Now that you’ve got your keto stuffed sandwich filled and pressed shut, it’s time to cook it. I prefer to fry mine in a pan with some butter. You could also opt to bake it in the oven, but I’ve never done this so I honestly have no idea on cooking temperature and time. If you bake one, let me know how it turned out!
If you choose to fry it like I do, add some butter (real butter! or other fat like coconut oil, ghee, or lard) to your pan and heat it over medium heat. Once the butter (or fat) is melted, add your keto stuffed sandwich to the pan and allow it to simmer for about 5 minutes. It’s done on that side once it’s golden brown.
Then flip the keto stuffed sandwich to the other side and allow it to cook for another 3-5 minutes. Wait for it to cook to a golden brown before removing.
Keto Stuffed Sandwich

Ingredients
- 1 cup finely ground, blanched almond flour
- 2 tablespoons coconut flour
- 2 teaspoons xanthan gum
- 1/4 teaspoon salt
- 2 teaspoons apple cider vinegar
- 1 egg
Instructions
- Add all dry ingredients (almond flour, coconut flour, xanthan gum, & salt) to a medium bowl and combine.
- Add apple cider vinegar and egg to the dry ingredients.
- Mix until combined and dough forms.
- Divide the dough into 4 equal balls.
- Add a piece of parchment paper to your work area.
- Place 1 dough ball on the parchment paper, then cover with another piece of parchment paper.
- Roll out the dough into a symmetrical shape (square, rectangle or circle works; doesn't have to be perfect ) that's about 1/16th (2mm) thick.
- Now roll out the remaining 3 dough balls in the same manner.
- Fill one side of each piece of dough with your cooked filling. I like mozzarella cheese and pepperoni; hubby went with cooked ground pork and Italian seasoning.
- Fold the empty side of the dough over to cover the filling and touch the edges of the dough together.
- Use a fork to press the edges of the dough together to seal them.
- Add butter (or your choice of healthy fat) to a skillet and heat on medium heat.
- Once the butter (or fat) is melted, add a stuffed sandwich to the skillet and cook for about 5 minutes.
- Once the cooked side is golden brown, flip it over and cook for another 5 minutes until golden brown.
- Remove from the skillet and serve immediately.
- Feel free to serve with any sauces that might compliment your sandwich (like marinara, cheese sauce, coconut aminos, or soy sauce).

Serve and Enjoy
Once both sides are fully cooked and golden brown, remove it from the pan and serve it immediately. Depending on the filling you chose for you stuffed sandwich, you might like it with a dipping sauce. I like my pizza keto stuffed sandwich with marinara on the side. The hubby enjoys his pot sticker type keto stuffed sandwich with coconut aminos (which tastes like soy sauce) on the side.
