What You’ll Need

I use a ceramic wok to cook this keto fried rice in. The sides of this wok are nice and high, which cuts down on the mess I make on my stove! Plus, the ceramic coating prevents any sticking, which makes cleanup a breeze.

Coconut aminos are the perfect healthy substitute for soy sauce.

I like to use coconut aminos to replace soy sauce in my Asian dishes. Coconut aminos are much lower in sodium and contains no wheat or gluten. It tastes just like soy sauce – my family and friends don’t even notice a difference when I serve them Asian dishes made with this!

Ingredients for Keto Cauliflower Fried Rice

You’ll need 12 ounces of riced cauliflower. I’m lazy and prefer to get the frozen, pre-riced cauliflower bags that you cook in the microwave. I’ve seen these at my local Sams Club, Walmart, and Publix – they seem to be everywhere, and there’s lots of brands.

If you prefer, you can make your own riced cauliflower from a fresh head.

For this recipe, I skip the traditional peas and carrots and use white onion (or scallions) and bell peppers to save a few carbs. I also like to add 2 scrambled eggs for extra flavor and color.

You’ll also need some butter (or other healthy fat like ghee or coconut oil), toasted sesame oil, coconut aminos, garlic powder (or 2-3 fresh cloves), and ground ginger.

Prep Your Ingredients

If you’re using frozen, pre-riced cauliflower, prepare it according to the instructions on the bag.

If you’re using a fresh head of cauliflower, you’ll need to rice it first. Cut the florets from the head, then pulse them in a food processor until they’re chopped into little bits that are about the size of rice grains. If you have a big head of cauliflower, you may need to do this in a few batches. Don’t over-do it or you’ll end up with mush!

Chop your veggies into small pieces. I like my veggies chopped into squares to make them bite size, but you could cut them into strips or even dice them if you prefer.

Cook Your Keto Cauliflower Fried Rice

Okay, so you’ve got your wok and your prepped veggies and the seasonings. Now it’s time to get cooking!

Start by adding the butter (or other fat) to your wok and heating it to medium-high heat. Once the butter melts a bit, add the onions and bell peppers in and cook for about 4-5 minutes.

Add the riced cauliflower to the wok and stir it all together. Then add all of your seasonings and cook for another 3-4 minutes.

Now to cook the egg. Move everything in the wok to the outer edges, leaving the center of the wok empty. Beat 2 eggs in a separate bowl, then add them to the center of the wok. Let them cook for a minute, then begin scrambling the eggs.

Once the eggs are scrambled and cooked through, mix them in with everything else in the wok.

Plate it up and enjoy! This makes a nice side dish on its own. It’s also great served with other Asian dishes. I like to put this keto cauliflower fried rice in a dish and then top it with chicken stir fry to satisfy my Chinese food craving!

Ingredients

  • 12 ounces riced cauliflower (I use frozen, pre-riced but fresh is fine too)
  • 1/4 cup onion, white or scallions, chopped
  • 1 cup bell pepper, any color, chopped
  • 1 teaspoon garlic powder (or 2-3 cloves, minced)
  • 1/2 teaspoon ground ginger
  • salt & pepper to taste (I like a small shake of salt and a hefty shake of pepper)
  • 2 eggs, beaten
  • 2 tablespoons butter (or coconut oil or ghee)
  • 2 tablespoons coconut aminos
  • 1 teaspoon toasted sesame oil

Instructions

  1. Prepare your cauliflower: For frozen, pre-riced, follow microwave instructions on the bag. If using a fresh head of cauliflower, cut the florets from the head, then pulse in a food processor until it's cut into small bits that resemble rice (this may take multiple batches in the food processor).
  2. Add butter to a wok and heat to medium-high heat.
  3. Once the butter is mostly melted, add onions and bell peppers to wok, allow to cook for 4-5 minutes.
  4. Add riced cauliflower to the wok and stir to mix everything together.
  5. Add salt, pepper, garlic, ginger, coconut aminos, and toasted sesame oil and stir to combine. Allow to cook for another 3-4 minutes.
  6. Move the mixture towards the edges of the wok, leaving an empty space in the middle. Ad the beaten eggs to the middle of the wok and scramble them (about 2 minutes).
  7. Once the egg is cooked, stir it into the mixture until everything is well combined.
  8. Serve and enjoy!
