This keto chaffle cheesy bread recipe is perfect to pair with a salad or keto pasta. It also makes a great snack all on its own!
Keto Chaffles are all the rage right now in the keto community. And it’s no wonder – they’re fast and easy to make, plus they’re super versatile! It’s fun to come up with new recipes using the basic chaffle recipe!

Stuff You’ll Need for this Chaffle Recipe
You’ll need a mini waffle maker to make these – it’s the secret weapon to making the “bread” crispy on the outside and soft on the inside super fast! A full-size waffle maker also works.
You’re also gonna need some shredded mozzarella cheese and shredded Italian (or Parmesan) cheese. To achieve the lowest carb count possible, go for the blocks of cheese and shred them yourself (most pre-shredded bags coat the cheese in a starchy powder to keep it from sticking)! I use a rotary cheese grater to shred my blocks of cheese and love it.
You’ll also need some almond flour, one egg, and some seasoning.
Cook Your Chaffle Cheesy Bread
Plug in your mini waffle maker so it can pre-heat. I like to put mine on a paper plate for easy cleanup!
Make the chaffle batter by mixing one egg, 1/3cup mozzarella cheese, and 1/3 cup Italian blend (or Parmesan) cheese, 1/4 teaspoon of each seasoning: garlic powder and onion powder, plus a pinch of salt and pepper.
If you like a bit of extra crispiness on the outside of your “bread”, add a sprinkle of mozzarella cheese directly to the waffle maker first, then pour about half of the batter in, then top the batter with another sprinkle of mozzarella cheese.
You don’t have to add the extra sprinkles of mozzarella cheese – they’re totally optional! The important thing is that you pour only about half of the batter onto the mini waffle maker.
Close the lid of the mini waffle maker and let it cook for about 5 minutes, or until it’s golden brown. Carefully remove the chaffle with a spatula and place it on a cookie sheet. If it’s sticking to the mini waffle maker, it may need to cook a bit more – close the lid and wait another minute, then try again.
A note about cooking spray – you can spray the mini waffle maker prior to adding the batter, but it seems that it’s optional. I have forgotten to spray my mini waffle maker when making these and have never had an issue with sticking. If the chaffle doesn’t come out easily after cooking for 5 minutes, just give it another minute or so to cook and then it’ll release easily.
As soon as the chaffle is removed and placed on the cookie sheet, sprinkle it with mozzarella cheese and any additional spices you like.
Repeat this process for the remaining part of the batter.
Broil the chaffle cheesy garlic bread for about a minute or until the cheese is golden brown.
You can optionally cut into strips or serve whole.
Keto Chaffle Cheesy Bread
This fast and easy keto chaffle cheesy bread is the perfect low carb keto side to pair with your favorite keto pasta, salad or pizza. It's also delicious on its own as a quick snack!
Ingredients
- 1 egg
- 1/3 cup shredded mozzarella cheese
- 1/3 cup shredded Italian blend (or fresh Parmesan - not the stuff in a can)
- 1 tablespoon almond flour
- 1/4 teaspoon garlic powder (or more to taste)
- 1/4 teaspoon onion powder
- pinch of salt and pepper (to taste)
- For topping: 1/3 cup shredded mozzarella cheese
- For optional crispiness (steps 3 & 5): an extra bit of mozzarella cheese
Instructions
- Pre-heat your mini waffle maker.
- Mix all ingredients (except cheese for topping) in a bowl.
- Optional: once mini waffle maker is hot, add a sprinkle of mozzarella cheese to the bottom plate. This adds a bit of crispiness.
- Add half of the batter to the mini waffle maker.
- Optional: if you opted to do step 3 for crispiness, add another sprinkle or mozzarella cheese on top of the batter. (for equal crispiness on both sides).
- Close the mini waffle maker lid and allow to cook until done (about 4-5 minutes).
- Open the lid of the waffle maker and check. If it's done, the edge will easily come up with a spatula and the chaffle will be golden brown.
- Carefully remove the chaffle from the mini waffle maker and put on a cookie sheet.
- Repeat steps 1-8 with the remaining batter.
- Sprinkle the mozzarella cheese that was set aside on top of the chaffles.
- Optional: add seasoning to taste.
- Broil for 1 minute or until cheese topping is golden brown.
- Optional: cut into strips to make them look like breadsticks.
- Serve and enjoy!
