What You’ll Need

Keto Chaffles are made on a mini waffle iron, so you’ll need one of those. If you have a regular waffle maker, that’ll work too.

You’ll also need some shredded mozzarella cheese. The pre-shredded bagged stuff works fine, but if you’re looking for the lowest carb option, buy a block of mozzarella cheese and shred your own with a rotary cheese grater.

I’ve had this exact rotary cheese grater for years and absolutely love it – it’s easy to use and clean (dishwasher safe), and it’s super durable because it’s made of metal!

You’re also gonna need an egg, almond flour, sugar free marinara sauce, garlic powder, onion powder, oregano, parsley, and your choice of pizza toppings (I used pepperoni).

Make Your Chaffles

Start by plugging in your mini waffle maker so it can pre-heat. I like to put a paper plate under mine to catch any mess – it makes cleanup easy!

Mix the pizza chaffle batter by combining 1 egg, 1/3 cup shredded mozzarella cheese, 1/3 cup Italian blend or fresh Parmesan, 1 tablespoon of almond flour, 1/4 teaspoon garlic powder, onion powder, oregano, and parsley, and a pinch of salt and pepper.

If you’re worried about the chaffle sticking, you can spray the mini waffle maker with cooking spray. I used to spray mine, but forgot a few times and didn’t have any issues with sticking. Once the chaffle is fully cooked, it easily comes up from the mini waffle maker with a spatula. If you experience some sticking, allow it to cook for another minute or so and then try to remove it again.

For a crispier outside, sandwich the batter between some extra mozzarella cheese. Sprinkle mozzarella cheese directly onto the mini waffle iron, add half of the batter, then sprinkle more mozzarella cheese on top of the batter. This extra bit of cheese crisps up nicely and adds a tiny bit of crunch when you bite into the chaffle.

If you’re not opting for the extra crispiness, just pour half the batter directly onto the mini waffle iron.

Close the lid and let it cook for about 5 minutes. It’s done when the chaffle looks golden brown. You’ll know for sure that it’s done when it easily comes up with a spatula. If it seems a bit sticky and doesn’t want to release from the mini waffle iron, close the lid and let it cook for another minute, then check it again.

Repeat this process with the remaining batter (and extra sprinkles of mozzarella if you’re going for the added crispiness).

Creating the Pizza Chaffle

Put the chaffles on a cookie sheet and top it with sugar free marinara sauce, mozzarella cheese, and any toppings or spices that you’re using.

Broil the chaffle pizzas for about a minute, or until the cheese is golden brown or at least until the cheese is melted.

Ingredients

  • 1 egg
  • 1/3 cup shredded mozzarella cheese
  • 1/3 cup shredded Italian blend (or fresh Parmesan - not the stuff in a can)
  • 1 tablespoon almond flour
  • 1/4 teaspoon garlic powder (or more to taste)
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon parsley
  • pinch of salt and pepper (to taste)
  • 1 tablespoon sugar free marinara sauce
  • For optional crispiness (steps 3 & 5): an extra bit of mozzarella cheese
  • For topping: 1/3 cup shredded mozzarella cheese
  • Additional pizza toppings of choice

Instructions

  1. Pre-heat your mini waffle maker.
  2. Mix all ingredients (except cheese for topping) in a bowl.
  3. Optional: once mini waffle maker is hot, add a sprinkle of mozzarella cheese to the bottom plate. This adds a bit of crispiness.
  4. Add half of the batter to the mini waffle maker.
  5. Optional: if you opted to do step 3 for crispiness, add another sprinkle or mozzarella cheese on top of the batter. (for equal crispiness on both sides).
  6. Close the mini waffle maker lid and allow to cook until done (about 4-5 minutes).
  7. Open the lid of the waffle maker and check. If it's done, the edge will easily come up with a spatula and the chaffle will be golden brown.
  8. Carefully remove the chaffle from the mini waffle maker and put on a cookie sheet.
  9. Repeat steps 1-8 with the remaining batter.
  10. Spoon sugar free marinara onto each chaffle and spread it out evenly.
  11. Optional: add seasoning to taste.
  12. Sprinkle mozzarella cheese onto each chaffle.
  13. Add any extra toppings of choice.
  14. Broil for 1 minute or until cheese is golden brown.
  15. Serve and enjoy!

Notes

If you don't have Italian blend or Parmesan on hand, you can swap it out for mozzarella (same measurements) and it still tastes great!
