I’m a huge chaffle fan, but sometimes I want a keto bread that’s soft and chewy. This 90 second keto bread is perfect for that time! It’s soft and chewy with a texture that’s super close to regular bread.

I stumbled across a 90 second keto bread recipe many years ago when I was just starting my keto journey. I found it to be invaluable to satisfy my bread cravings which helped keep me on track. I’ve experimented with so many variations of this recipe over the years, I don’t even remember what that first recipe was or where I found it!

Anywho, this version of 90 second keto bread is fantastic. I think it gives the perfect chewy bread texture while still being soft and fluffy. It’s also not eggy tasting, which is great!

What You’ll Need

So first things first – you’ll need a microwave to cook this 90 second bread. If you don’t have a microwave, you can bake it in the oven at 375F for about 10-12 minutes. You’ll want to use an oven-safe dish like a small glass casserole dish if you choose to bake it in the oven.

You’ll need a coffee mug or small flat, microwave safe dish to cook this in the microwave. I use a tall coffee mug to make round bread for mini breakfast sandwiches and a plastic sandwich container when making sandwich bread. I’ve never had an issue with using this container in the microwave, probably because of the really short cook time. If you have concerns, try this small microwaveable container that’s really close to the same size.

Keep in mind that this keto bread takes on the shape of the container that you cook it in. As you will see from the pictures, cooking it in a tall coffee mug results in a long log type bread which I cut into 6 pieces to make mini breakfast sandwiches.

To get an average English muffin size bread, use a 2cup round glass dish. If you’re looking for the perfect bread shape that resembles a loaf of bread from the grocery store, use a sandwich container.

You’ll need some psyllium husk powder for the full chewy texture. I use the Now brand psyllium husk powder because it doesn’t turn purple when cooked like other brands I’ve tried. The odd color that some brands add doesn’t cause any flavor issues, it just looks strange.

You’ll also need some almond flour, baking powder, butter, and an egg (or egg whites). A note about the egg: I typically just use one whole egg. If you find it to be too eggy tasting this way, use egg white from one egg (or the equivalent from the packaged egg whites).

Making Your 90 Second Keto Bread

Start by grabbing your microwave safe dish. Put 1 tablespoon of butter in it and melt it in the microwave. I like to cut the butter into small pieces so that it melts super fast. It usually takes 30 seconds or less to melt.

Now add 1 whole egg (or egg white from 1 egg), 3 tablespoons of almond flour, 1 teaspoon of psyllium husk powder, and 1/2 teaspoon of baking powder to your container. Mix it thoroughly with a fork.

Level out the mixture in the container by moving the container around as needed. You can also use the flat underside of the fork or a spatula to level it out if needed.

Once your mixture is nice and level, give it a little tap on the counter. This helps to get rid of any big air bubbles that might be in the mixture.

Nuke It

Now pop the container in the microwave and nuke it for 90 seconds. If you don’t have a microwave, you could bake it in an oven-safe dish for about 10-12 minutes at 375F.

You’ll know when the bread is done because the edges of the bread pull away from the sides of the container a bit and the bread feels soft and spongy.

Slice It

90 second keto bread can be cut to any thickness you like.

Now to slice it into pieces. If you’re using a tall coffee mug, lay the log shaped bread on its side and cut it so that you have circles. I usually get 6 slices from the tall log shaped bread.

If you use the 2cup circle dish, cut it horizontally so that you end up with two pieces that are the full size of your container.

If your container was wide and made the mixture thin, this will result in a thinner final bread. Just slice it in half instead of horizontally and you’re good to go.

Regardless of how you slice this wonderful 90 second keto bread, know that you can have the entire recipe for just 3g net carbs!

Toast It

Before you dig in to that beautiful 90 second keto bread, you’ll want to toast it. It will toast up fine in the toaster, but I prefer to toast mine in a buttered pan.

Once it finishes toasting, it’s ready to eat!

90 Second Keto Bread

Ingredients

  • 1 large egg (OR liquid egg white to equal 1 egg)
  • 1 tablespoon butter
  • 3 tablespoons almond flour
  • 1 teaspoon psyllium husk powder (optional - for chewier texture)
  • 1/2 teaspoon baking powder
  • Microwave-safe container: small square or rectangular glass dish or sandwich storage container works great

Instructions

  1. Add butter to your microwave safe container, then melt it in the microwave (about 30 seconds).
  2. Add all remaining ingredients to the container with the melted butter and mix thoroughly with a fork.
  3. Level out the mixture so that it's evenly spread in the container, then lightly tap it only the counter to remove air bubbles.
  4. Microwave for 90 seconds.
  5. If you don't have a microwave, you can bake it in the oven at 375F for about 10-12 minutes.
  6. The bread is done when it's spongy to the touch. The edges also pull away from the container a bit.
  7. Remove from the microwave or oven.
  8. Slice the bread into two pieces. Depending on the shape of your container, you can either cut it into a left and right half, or slice it horizontally into thinner pieces.
  9. Toast the bread in a pan with butter OR in the toaster.

Notes

  • For a less "egg-y" taste, substitute the 1 egg for 1 egg white. Liquid egg whites from a carton work too - just use the measurement for one egg according to your carton.
  • The psyllium husk powder is optional - it adds a bit of a chewy texture.
  • Toasting the bread makes it taste best.

I’m a total grilled cheese fanatic (probably because I love cheese so much)! I often use this 90 second keto bread to make a grilled cheese. Since I’m already toasting it in a buttered pan, it’s halfway to being a grilled cheese already! After I finish toasting the bread, I keep it in the pan and assemble a grilled cheese, usually with bacon.

Hubby really enjoys using this 90 second keto bread for a breakfast sandwich with sausage and egg. He also uses it to make lunch meat sandwiches like roast beef with Swiss cheese or club sandwiches.

  1. Soooooo fluffy, yummy and versatile! I just made it for the first time. Been making the coconut flour mug bread the past couple of days but this is so less dense. Grilled a couple of pieces and HOLY HELL it s amazing! Love your site and your recipes. Coconut flour wraps (love wrapping my salad) are next! Neither bread has affected my keto either.
