It seems like the flavor combinations allow for nearly unlimited variety! This bacon jalapeno keto chaffle adds a nice spicy twist to the classic chaffle. So far, it’s one of my favorites – especially dipped in Ranch dressing with a little Sriracha or hot sauce mixed into it!

As with all of the keto chaffle recipes, you’ll need a mini waffle maker. I have a Dash mini waffle maker and absolutely love it. It makes chaffles that are the perfect size to stand in as a hamburger bun, and the waffle maker is easy to store and doesn’t take up a lot of space, thanks to its small size! Plus, it’s super affordable and it comes in a bunch of cute colors!
Spicing Up Your Jalapeno Keto Chaffle
I have an obsession with all things spicy. I tend to like really spicy foods – like adding ghost pepper hot sauce to lots of things. With this recipe, you can keep it mild with just a few jalapeno slices, or you can kick it up a few notches by using habanero cheese and piling on the jalapenos. You can even add hot sauce to the batter for added spice!
So let’s get to making that spicy chaffle!
Things You’ll Need
Every good chaffle creation starts with a good base. If you’d like more info about the basic keto chaffle recipes (both savory and sweet), you can get that recipe here.
You’ll need a waffle maker. I use the Dash mini waffle maker, but you could make these on a regular sized waffle maker too.
If you’re shredding your own cheese from block cheese to save a few carbs, you’ll find this rotary cheese grater to be super handy. I’ve had mine for years and just love it. I literally use it every day and it’s still just as good as the day I bought it!
For this bacon jalapeno keto chaffle, you’ll need these ingredients:
- 1 egg
- 1/2 cup shredded mozzarella cheese (shred from a block for fewest carbs possible)
- 2 slices (or 1/4 cup shredded) sharp cheddar, Colby, pepperjack, or habanero cheese (I used jalapeno habanero jack because I love spicy!)
- 2 tablespoons jalapenos (jarred or fresh, sliced or diced – whichever you prefer)
- 2 slices of bacon, crumbled (or use a sprinkling of real crumbled bacon – found in the salad dressing aisle at the grocery store)
- 1 tablespoon almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne powder
- salt & pepper to taste
Making Your Bacon Jalapeno Keto Chaffle
Start by plugging in your mini waffle maker so that it can pre-heat.
Add the egg, mozzarella cheese, almond flour, baking powder, and spices to a bowl and mix it until well combined. I just use a fork for this and it works fine.
Set aside the slice or 1/4 cup of cheese, jalapenos, and bacon. This will be added separately during the cooking process.
Once your mini waffle maker is hot and ready to go, open it up and add just enough batter cover the bumps of the bottom plate. Don’t fill it all the way!
Now add your filling: the “other” cheese, jalapenos, and bacon until you have an even layer on top of the batter.
Next, pour another small amount of the batter over the filling and smooth it out evenly.
Then close the lid of the mini waffle maker and let it cook for 3-4 minutes. It’s done when it looks golden brown. If the batter is sticking the the lid when you try and open it, it’s not done – close it again and allow it to cook for another minute, then check again.
Once the bacon jalapeno keto chaffle is done, carefully remove it from the mini waffle maker and set it aside.
Repeat this process for the remaining batter and ingredients. I was able to make 3 chaffles total.
Bacon Jalapeno Keto Chaffle
Enjoy a spicy twist on the classic keto chaffle with this bacon jalapeno keto chaffle! Easily spice it up or down to fit your spice level.
Ingredients
- Batter:
- 1 egg
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon almond flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne powder
- optional salt & pepper to taste
- Filling:
- 1/4 cup (or 2 slices) other cheese: sharp cheddar, Colby, pepperjack, or habanero are great options (I used jalapeno habanero pepperjack cheese)
- 2 tablespoons jalapenos (jar or fresh, sliced or diced - add more or less to your desired spice preference)
- 2 slices bacon, crumbled (or use Hormel real crumbled bacon bits)
Instructions
- Pre-heat your mini waffle maker.
- Set aside your Filling ingredients: the 2 cheese slices (or 1/4 cup cheese), jalapenos, and bacon
- Mix egg, mozzarella cheese, almond flour, and spices in a bowl. Using a fork to mix is fine.
- Once mini waffle maker is hot, add just enough batter to cover the bumps in the bottom plate.
- Add about 1/2 of the Filling ingredients that were set aside: cheese slices (or 1/4 cup cheese), jalapeno, and bacon
- Pour a small amount of batter over this new layer and evenly spread it out. You want to just barely cover this middle layer.
- Close the mini waffle maker lid and allow it to cook until done (about 4-5 minutes).
- Open the lid of the waffle maker to check. The chaffle is done when it's golden brown and the edges come up easily. If the batter is sticking to the lid, it's not done and may need to cook for an additional minute.
- Once done, carefully remove the chaffle from the mini waffle maker and set it aside on a plate.
- Repeat steps 1-9 for remaining batter and ingredients to make 1 more chaffle.
- Serve and enjoy! These were great dipped in Ranch dressing mixed with a few squirts of sriracha sauce!
Notes
Shredding your own cheese from a block instead of using pre-shredded, bagged cheese will cut down on the carb count. Use a rotary grater to make this easy!
